Alcohol Through History: From Prehistoric Fermentation to the Word “Alcohol”
Humans were making fermented drinks thousands of years before anyone used the English word alcohol.
That mismatch is the most useful organizing fact in the history.
- Fermentation is prehistoric.
- Distillation technology is ancient but much later.
- The modern word and its ethanol meaning are later still.
Why fermentation is likely to be very old
Sugars, microbes and water existed together long before humans understood microbiology.
- Fruit ferments naturally.
- Honey diluted by rain or water can ferment.
- Starch-rich plants can become fermentable once human processing or microbial enzymes make sugars available.
So the remarkable archaeological question is not:
Who first invented the chemical possibility of fermentation?
It is:
When do we have convincing evidence that humans were deliberately producing and managing fermented beverages?
Archaeology gives us snapshots rather than a single clean birthday.
About 13,000 years ago: Raqefet Cave
At Raqefet Cave in what is now Israel, Li Liu and colleagues studied stone mortars associated with Natufian burials.
They combined:
- microscopic residue analysis;
- starch analysis;
- use-wear;
- archaeological context;
- experimental reconstruction.
They interpreted the evidence as cereal-based beer brewing around 13,000 years ago, associated with ritual feasting.
This is often described as the earliest archaeological evidence for beer brewing.
The wording matters:
evidence interpreted as brewing
is stronger and more accurate than:
archaeologists found a 13,000-year-old pint of beer.
Ancient residues are indirect evidence, and the brewing interpretation has been debated in the literature.
That debate is not a weakness of archaeology.
It is what archaeology looks like when organic products disappear and researchers must infer behavior from surviving chemistry, microscopic wear and context.
Around 7000–6600 BCE: Jiahu
At the Neolithic site of Jiahu in Henan, China, Patrick McGovern and colleagues analyzed organic compounds absorbed into pottery.
Their chemical evidence indicated a mixed fermented beverage involving:
- rice;
- honey;
- fruit, interpreted as hawthorn fruit and/or grape.

The important methodological point is that ancient ethanol itself is not what survives for thousands of years.
Researchers infer the beverage from chemical markers and archaeological context.
That is a recurring theme in food archaeology:
the process disappears; chemical traces of ingredients and processing may remain.
Around 6000–5800 BCE: grape wine in Georgia
Research at early Neolithic sites in Georgia in the South Caucasus found biomolecular and archaeobotanical evidence for grape wine and viniculture dating to roughly:
The evidence included chemical residues in pottery together with environmental and plant evidence.
- These large jars may have served multiple roles in fermentation, aging and serving.
- By this point, alcoholic beverage production was clearly not one isolated trick.
- Different regions were developing fermentation around locally available carbohydrates.
There probably was no single “inventor of alcohol”
The archaeological record strongly argues against imagining alcohol as one discovery that spread everywhere from one genius brewer.
Fermentation can arise from many local substrates:
- fruit;
- grain;
- rice;
- honey;
- agave;
- other sugar- or starch-containing materials.
- Human communities repeatedly learned to manage microbial processes without knowing the modern biochemistry.
- The specific drinks and techniques had local histories.
- The underlying microbial chemistry was universal.
Distillation is a later technology
Fermentation alone can produce alcoholic beverages.
Distillation requires additional hardware:
- a heated vessel;
- control of vapor;
- cooling/condensation;
- collection.
The material archaeological record for early distillation has been much poorer than the record for pottery and fermentation residues.
A striking 2026 study changed part of that picture.
Researchers reconstructed and experimentally tested an apparatus excavated from the first-century-BCE tomb of the Marquis of Haihun in Jiangxi, China.
They identified it as the earliest empirically verified example yet reported of an intermittently replenished water-cooled distillation apparatus, and the earliest archaeologically intact still identified by the study.
The apparatus is historically important.
But do not leap from:
ancient still
to:
ancient whisky distillery.
- The archaeology establishes sophisticated distillation technology.
- It does not by itself establish what substance was being distilled in everyday use, nor prove beverage-spirit production.
- That distinction is worth preserving because “oldest X ever” headlines often erase exactly this kind of evidential boundary.
The word “alcohol” did not begin as a drink word
The word's history is wonderfully indirect.
European forms ultimately trace to Arabic:
related to kohl, the fine dark cosmetic powder traditionally used around the eyes.
The word moved through medieval Latin and Iberian/European usage.
Its meaning broadened from an especially fine powder or refined substance toward the essence or highly refined product of a material.
That semantic idea could then be applied to products obtained by distillation.
Eventually expressions equivalent to alcohol of wine helped shift the word toward the volatile intoxicating component of wine.
By the eighteenth century, the ethanol sense was established in English usage.
Modern chemistry later generalized alcohol again into the name of an entire class of organic compounds containing characteristic hydroxyl functionality.
So the semantic path is roughly:
Arabic al-kuḥl / kohl
→ very fine/refined powder
→ refined essence / distillate
→ “alcohol of wine”
→ ethanol

It repurposed a word for refinement.
A linguistic loop back into Arabic
There is even a historical loop.
The University of Oslo's Etymological Dictionary of Arabic notes that the modern Arabic use of forms corresponding to “alcohol” in the modern spirit/chemical sense appears to be comparatively late and likely influenced back from European usage, even though the European word ultimately derives from Arabic kuḥl.

This confuses:
- the prehistoric age of alcoholic fermentation;
- the much later history of the word alcohol.
Humans may have deliberately brewed fermented cereal beverages around 13,000 years ago.
The English/European word alcohol is vastly younger, and its original meaning had nothing specifically to do with beer or wine.
This is exactly the sort of claim where a fact sounds plausible only because two unrelated timelines have been collapsed.
